Does Claire Saffitz’s Chocolate Chip Cookie Recipe Actually Live up to the Hype?
To see whether non-professionals could taste the difference, we conducted a blind taste test comparison with an eight-person panel evaluating three unnamed batches: a standard creaming-method Toll House batch, a streamlined brown-butter recipe with standard chips, and Saffitz’s full 48-hour feve preparation.
Six out of eight panellists picked the full Saffitz cookie as the superior treat, citing the depth of the dough rather than just sweetness. Two participants noted that the chocolate tasted less like candy and more like high-end pastry work.
However, criticism surfaced around sweetness perception. While Saffitz balances the sugar with browned dairy solids and dark chocolate, testers sensitive to butter richness found a single five-inch cookie too heavy to finish in one sitting. For casual occasions where people prefer light, crispy snacks, the dense richness proved almost overwhelming.
